An animal is considered demonic when a hostile Demon infects them. This can only happen to previously passive mobs, such as a sheep. These are now hostile and will attack the player. Once the mob is killed, the demon is released, and if the player doesn't kill it, it can infect another animal. Demonic Animals can also spawn rarely on Withered Grass blocks in the Nether.
